What's your best fighting game?? mines are tekken series, with jin kazama.
I'd have to say Capcom vs. Snk2. Lots of characters, nice combos, requires quite some skill to master the character. But I think I like it cuz I've played it so much. I got 1st place in several Capcom vs. Snk2 tournaments (only won like 25$, but who cares?)

Soul calibur 3- mitsurugi, sophitia, taki
tekken 5- devil jin, asuka, raven
kof- iori, robert, athena
MVC- akuma, ken, wolverine

Hard to pick beetween Tekken, Soul Caliber and DOA but i'd have to say Tekken Tag probably because me and my friends played it all the time and tekken bowling was madly addictive! My winning team was generally Baek and Panda.
1. KOF2002; Athena, Kula, K'
2. Samurai Spirits Tenkaichi Kenkakuten; Nakoruru, Rimururu, or Yumeji
3. Capcom Vs. SNK 2; Athena ratio 2, Nakoruru ratio 2
But i got a bone to pick with CvS2 because many SNK characters are completely useless, and only become somewhat usable with RCing, and even then is questionable. (Kyo, Haohmaru).

My best fighting game would have to be Marvel vs Capcom 2. My best team being Wolverine (with short white claws), Ken, and Jin. With Wolverine, the only special I usually use is Berserker Rage, which speeds him up. My opponent never knows what's coming. So fast, they don't even have time to block. xD
My bests are 3rd Strike and GGX2
Way back when though, I was a beast on Samurai Showdown 2. It's been ages though, and I haven't seen it in any arcades since lord knows when.

My Favorites:
1.) Guilty Gear XX (Original/Reloaded/Slash): The most indepth fighting game ever! That is a fact! The graphics on this 2D fighting game is one of the best right now and was the best when it first came out. The story between the Holy wars between humans and gears is very intriguing and draws you into the Guilty Gear Universe. But the best part of this game is it's attention to detail and it's indepth combat system. You have a guard guage, burst guage, instant kills, faultless defense, instant blocks, roman cancels, and false roman cancels are all unique only to Guilty Gear. You have those in additon to the usual stuff such as a tension bar, overdrive attacks, special attacks, counter attacks, and such. Each character is unique as no two character will share the same move and each character requires a different strategy with different combos against other characters. Also, each characters have unique stats where they vary in attack and defense. So while one move may destroy Chipp, that same may do a lot less to Potemkin. That, and there is also the intense soundtrack (some may not like it) that fit the game really well along with crazy all the crazy character name puns named after many different rock artist or groups.
2.) Tekken Tag Tournament: If you thought Tekken was fun by it self then try multiplying it by errrrr.... 2, or uh 4,..... 13? and you get TTT! All your favorite characters from Tekkens 1 - 3 all jammed into one game! And there is Tekken Bowl!
3.) Melty Blood
4.) Fist of the Northstar
5.) Capcom vs. SNK 2

I wouldn't say that GGXX has the most depth... sure, there is plenty to be seen and done on the game, and the system is great... but compare it to something like Capcom vs SNK 2, you'll see what I mean... just don't get me wrong though; I still prefer GGXX over CvS2 :)
Wow...fighting games...I've played a lot in my life time...The best huh?
I'll go for
Tekken-- Kazuya and Paul
Soul Calibur -- Nightmare and Mitsurugi
Capcom vs SNK 2 -- Akuma and Iori
Gundam Battle Assault -- Wing Zero and Justice
There are a lot more, but since it was specified that the BEST fighting I've ever played, I won't mention the others. Capcom vs SNK 2...my cousin and I had a bet on which of us will get each other's secret character the fastest. ( Shin Akuma and Omega Rugal) I got Omega Rugal and he got Shin Akuma. I lost on this bet since Omega Rugal was such a pain...you know the HBC + K move he does, the unblockable grab? It took some time for me to figure this one out. Anyway it got easier to dodge that move after sometime.

I started with Tekken 3, my first fighting game.....
I really had a lot of fun with that game, I broke a controller (the first^_^) playing with it.
I was into the 3d fighting game untill I tried Guilty Gear XX.
What a fantastic game!
Who says that the 2d is dead??
I totally agree with guambombboy, so I don't waste time talking about how wonderful is this game.
So here's my favourites:
1) Guilty Gear XX : the midnight carnival #reload
2) Soul Calibur i
3) Tekken 5

My best fighters are:
-Guilty Gear: Missing Link, X, XX, #R and I'll surely play SLASH like hell. Main problem is, I can't find good GG players in Mexico :/
-Rival Schools / Project Justice: back when those games were released, I played them A LOT. I still have my skills, but now there are NONE RS players around here :(
-Capcom vs SNK 2: I can still find some serious players around here. I dunno why people complains about my main team (Kyosuke, Rock, Hibiki, K Groove) :P

From what I've played lately, I'd say Soul Calibur II/i. Accessible to everyone, nicely fast-paced--one of the few fighters that I find great to play with friends.
Otherwise, I'd say Tekken 3, which is still one of the best to-date.

I'll always be a Tekken lover. Tekken 3 arguably set the standard fighters had to meet from that point on and TTT was just a blast, period. The series fell a little with Tekken 4, but Tekken 5 picked it back up again and the future looks promising for the next games. Kazuya and Xiaoyu are my personal favorites to use, as far as Tekken 5 goes.
Guilty Gear XX is easily my favorite 2D fighter. I just couldn't get into Capcom vs. SNK 2 as I thought I would, and I never played any of the Marvel vs. Capcom games sadly. GGXX just has some of the best character design you could ask for, and everything about the music and gameplay makes for an intense fighting experience. Unlike 95% of the fighters out there, it even has a pretty interesting story, and they included a variety of different play modes to keep it from getting dull. I'll always be looking out for future releases of the GG series because of it...

I really can't claim just one favorite, but many of mine are from the Neo Geo (huggles her Neo Geo MVS arcade unit): KOF 95, Samurai Shodown 2 (yes I misspelled that on purpose, the game misspells it too), Mark of The Wolves, Last Blade 2, I could go on all day.
I love Guilty Gear X (X2, and X2 # Reload broke my favorite character, and Isuka is impossible to play single player). I remember first hooking up my Dreamcast to my PC monitor via vga cable and playing GG and my eyes wanted to pop out.
Capcom vs SNK made me love the VS series again (I got so tired of the cheap, super combo madness of Marvel v. Capcom 1&2) although CvS2 went right back to the over-the-top sillyness. *sigh*
Maybe because I started playing fighters back with SF2 in the arcades, I am way more fond of 2D fighters than 3D. I guess my favorite 3D fighter would have to be Soul Calibur on the DC. I don't like the route that Namco took with SC2&3. Soul Edge and Soul Calibur had such a tight, cohesive story, and then SC2 goes and tries to re-write the story as if SC 1 had never happened (why is Maxi back?! Lord knows, I love him, but he died at the end of SC1) Yes, I actually pay attention and prize a good story in a fighting game, if that makes me look dumb, well then, guilty as charged.
I also love the wacky fighters, I could play Pocket Fighter, aka Super Gem Fighter Mini Mix all day, every day (I'm very interested to see if the upcoming PSP port will be arcade perfect, as bothe the PS1 and Saturn versions were each missing things, thought the Saturn version is the closest to being perfect and it plays faster too)
Oh, and the Darkstalkers series I love too, Vampire Savior on the Saturn is my favorite, though, Darkstalkers Chronicle on the Dreamcast is second. I have yet to pass judgement on Darkstalkers Collection on the PS2 as the package it is in hasn't arrived to me yet. :/
Whoops, I just saw that you asked best, not fave, so, um, mine would be Guilty Gear X, any of the King of Fighters, Capcom vs SNK, and Soul Calibur 1 (provided I can get my mojo going, playing that game well can be a zen-like experience).
