GTA is the only game you need on the PS2 that involves guns and cars.
The game Gungrave involves guns and cars (i'm not sure for the car).

Katamari damashii, Soul Calibur, Virtua fighter, God of War, First Jack and Daxter, Shadow of the Colossus, Ico, SSX, (Ugh) Madden. These are all good games w/o guns and driving cars.
Its hard not to involve neither guns or cars in a game, though, since those are two very promanent things in everyday life.

Well, I mean most PS2 games. I think the Final Fantasys have guns in them too. I don't know much about XBOX, so.. :/
In my opinion, the PS2 has had the most violent games yet. And they mostly come from guns. PS2 definitely has a whole lot of Gun games. Gun + Car is another matter, but the PS2 still has more Gun + Car games than say Xbox.

PS2 has Tekken and Soul Calibur 2 to 3, but I only play Tekken 5 at the moment. PS2 will be dead as soon as PS3 is coming out.
