I've been hearing and reading that Legend of the Galactic Heroes is impressive and I'm interested but the amount of episodes means it will be a significant investment of time. What are your thoughts and recommendations on this series?

Legend of the Galactic Heroes is absolutely amazing. It takes a serious investment of both your time and your attention to properly enjoy, but if you're willing to really put forth the effort, it is very satisfying.
